The fleshy red peppers are charred and blistered so the skins can be easily peeled off and then grilled over red-hot volcanic rock, which is preferable to charcoal because it doesn’t release gases. Preserved in quality extra Canino virgin olive oil, their succulent and juicy sweet rich flavour makes them ideal as an antipasto on toasted bread, bruschetta. They are also a perfect addition to any sauce. Traditionally made, this recipe does not use any preservatives.
