The aubergines are first washed (not skinned), then sliced and soaked in salt water before pressing to remove their distinctive bitterness. Grilled over red-hot volcanic rock, which doesn’t release gases, they are then marinated and preserved in Canino extra virgin olive oil. These fleshy vegetables soak up the oil and have a wonderful aromatic flavour. Ideal as an antipasto or on open sandwiches.
