This classic Thai combination of red and green chillies, lemon grass, garlic and coriander gives a quick karate chop to stir fried meat, fish or vegetables. The spices and herbs are finally chopped, then immediately cooked in a white wine vinegar jelly with a little lemon juice. It makes a brilliant dressing for warm salads and is excellent with cold meats.
